Sextant Wines & Gorgonzola Dolce
Since it is Mother's Day, we're celebrating with one of Mom's favorite dinners. She loves a good brisket, but loves a good Santa Monica Tri-Tip from the grill even more. We found an amazing piece of Gorgonzola Dolce cheese for sauce and we're pairing this feast with a beautiful Cabernet Sauvignon from Sextant Winery, one of our favorite wineries just up the road in Paso Robles.
Gorgonzola is an Italian blue cheese that is made in Northern Italy in the Piedmont and Lombardy regions. It's a creamy cow's milk cheese that is usually aged 3-6 months. Gorgonzola is delicious on its own with a nice Port, something sweet and velvety. An off-dry Riesling or Sauternes are also good, and we usually serve it with crackers and pear.
That being said, we are going to open a 2016 Reserve Cabernet Sauvignon or the 2017 Night Watch Proprietary Red Blend (or both) to go with this meal, since we are going to make a sauce with the Gorgonzola and it just makes sense with red meat. If we were using the sauce on pasta (add a little rosemary and walnuts and you've gone to heaven) we'd be opening a Pinot Gris or Chenin Blanc.
